Ingredients
1kg mixed fruit
2 cups fruit juice or cold organic tea of choice
1 tbsp sherry, or similar
2 cups self-raising flour
Method
Preheat the oven to 125°C.
Soak the fruit in juice/tea and sherry for 2 hours (or overnight).
Stir the flour into the soaked fruit and mix well.
Put into a large lined baking tin.
Bake for 2 hours in the bottom of the oven on 120°C.
Remove and leave to cool.
Put into a container or wrap in foil. Keep for 2-3 days before cutting.
Tip.
This will keep for ages if rum is poured on it at least once a week to keep it moist, it adds to the flavour too.. A cheaper rum is fine to use...
